Today, I am very excited to share my first recipe blog and I am even more excited to have done it with Janna from Behind the Blush. After seeing many tasty looking pumpkin recipe pins and photos that made our mouths water on other fabulous blogs, we decided to make our own pumpkin inspired recipe: pumpkin spice biscotti. The original recipe can be found here, however, we altered our recipe slightly and found it tasted fantastic.
- 2 1/2 cups flour (we used whole wheat)
- 1 cup sugar (we used coconut sugar)
- 1 teaspoon baking powder
- 1 teaspoon of cinnamon
- 1 teaspoon of pumpkin spice (which combines nutmeg, cloves, etc.)
- a pinch of salt
- 1/2 cup pumpkin puree
- 2 eggs
- 1 teaspoon of vanilla
Preheat your oven to 350F. Sift together all the dry ingredients including the flour, sugar, baking powder and spices in a large bowl.
In a separate smaller bowl, whisk together the wet ingredients. Then combine the dry and wet until it is generally mixed together but still quite crumbly.
Find a clean, dry surface and give it a light dusting of flour. Knead the dough and then form a log. The log should be generally flat and about 1/2 inch thick for thorough cooking. Place the log on a sheet of parchment paper and then place on a baking sheet. The parchment paper will make it really easy to transfer the cooked log.
Bake in the oven for about 22-25 minutes, until the centre is firm to the touch. Your kitchen will smell amazing with pumpkin goodness. Let cool for about 15 minutes before cutting into 1 inch pieces. I love cutting the biscotti on a slight diagonal. I would suggest then placing the cut pieces back in the oven for another 5 minutes to get that perfect crispiness. You can also place the biscotti in a cool dry place to firm over night.
To add another delicious touch, dip the ends in royal icing or swirl some over the biscotti.
