I absolutely love the smell (and taste) of rosemary, and even more so during the holiday season! Most of your dinner recipes will call for a bit of rosemary, so I thought this year’s Christmas drink should also make use of this delicious herb. And because I am pregnant, I am going to make a Christmas mocktail, but you could easily add a touch of prosseco or vodka to pump this up to cocktail status.
With this rosemary infused cranberry mocktail, you’ll use your left over herbs to make rosemary infused simple syrup, which is very easy to do. Make it ahead of time and keep it sealed in the fridge for Christmas day. If you haven’t experimented with infused simple syrups, don’t be scared! It only introduces a subtle flavour to your drink.
What You’ll Need:
- 1 cup sugar and 1 cup of water
- rosemary sprigs (you’ll need two for your simple syrup and then enough for garnish)
- Cranberry Juice
- Sparkling water or soda – I used San Pellegrino
- A squeeze of lime
- Fresh Cranberries
Instructions
- For the simple syrup: combine sugar, water and rosemary and simmer on low heat until sugar is completely absorbed. Strain into a glass jar with a lid to seal.
- For one drink: combine about 4 oz of cranberry juice, your lime juice and 1 teaspoon of simple syrup and shake. Pour into a glass and then top with your sparkling water. If adding alcohol, like 1 oz of vodka, mix that into the shaker step or instead of topping with sparkling water, top with prosseco! Garnish with a spring of rosemary and some fresh cranberries
- For a whole pitcher: use about 64 oz of cranberry juice, a whole litre of sparkling water or more if you want it to be more fizzy. Squeeze in two limes and add a full tablespoon of your rosemary simple syrup. Adjust to taste.
This rosemary infused cranberry mocktail is festive in flavours & colours, making it the perfect holiday drink. I love the contrast of the red & green the rosemary offers. It’s beautiful and delicious!
